Ingredients Zuppa Toscana Soup
- 1 pound russet potatoes, diced
- 1 cup heavy whipping cream
- ¼ bunch kale, chopped
- 1 pound ground Italian sausage
- 1 ½ teaspoons red pepper flakes
- 1 large white onion, diced
- 10 cups water
- 5 cubes chicken bouillon
- 4 strips bacon, diced
- 2 teaspoons garlic puree

In a skillet over medium heat, combine the sausage and red pepper flakes. Cook and stir for 7 to 10 minutes, or until the sausage is crumbled and brown. After draining extra fat, move the sausage to a bowl and place it aside.Zuppa Toscana Soup

Add the bacon, onion, and garlic to the same skillet and cook over medium-low heat for 10 to 15 minutes, or until the bacon is crisp and the onions are tender. Place aside.

In a large pot, combine the chicken bouillon and water; bring to a boil. Add potatoes and simmer for 15 minutes or until they are tender.

Add the cream and boil for about 2 minutes, or until heated completely. Add the kale, sausage, and onion mixture. Cook and stir for approximately ten minutes, or until the flavors blend.
