For the butter

  • Unsalted butter:This gives the food fat, which is also known as taste. We used high-quality vegan butter to avoid dairy.
  • Fresh parsley:This dish is much better with fresh herbs, but dried herbs will also work well. Other Italian herbs, such as fresh oregano, thyme, or rosemary, could also be included.

How to Make Herb Grilled Salmon (step by step)

Allow a little more time for the butter to cool and solidify. You can put it in the freezer if you don’t have time! Otherwise, it takes only a few minutes to prepare this easy dish.

  • Make the butter:Combine the ingredients from one of the above herb combinations with the softened butter in a small bowl. The herb butter mixture should be scooped onto a piece of plastic wrap or parchment paper, rolled like a log, and closed by twisting the ends. Chill until solid, about overnight.
  • Prep the salmon: Sprinkle each salmon piece liberally with salt and Italian spice after brushing it with avocado oil.
  • Cook the salmon: Heat a cast-iron skillet or medium saute pan over medium-high heat. Place the salmon on the pan, flesh side down, and sear it for three to four minutes, or until it is golden and crispy, once the oil is hot and rippling. This can be done on a grillpan as well. Continue cooking the salmon over medium heat for 3–4 minutes after flipping it over.
  • Top with butter:Place a thick ring of prepared garlic butter on top of each salmon piece for garnish. Cook for another one to two minutes, or until the salmon flakes and the internal temperature reaches 130°F for medium rare.
  • Serve Serve the salmon immediately with a squeeze of lemon and freshly chopped herbs. Lemon wedges or a little freshly cracked pepper could also be served with it. Additionally, if you’d like, you can top it with extra butter!
