Ingredients
- 4 (6 ounce) skinless, boneless chicken breasts
- ¼ cup basil pesto
- ¼ cup olive oil¼ cup olive oil
- 4 slices mozzarella cheese
- 2 tablespoons balsamic vinegar
- salt and freshly ground black pepper to taste
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- 1 teaspoon Italian seasoning
- 4 fresh basil leaves, minced
- ½ teaspoon salt
- 1 cup halved cherry tomatoes

Using the smooth side of a meat mallet, gently pound chicken breasts until they are about 1/2 inch thick. Put the chicken in a plastic bag that can be sealed.Grilled Chicken Margherita

In a small bowl, whisk together the salt, garlic, Italian seasoning, olive oil, and balsamic vinegar. Pour over the chicken, evenly coat it, and let it marinade for four to eight hours.Grilled Chicken Margherita

Lightly oil the grates of an outdoor grill and preheat it to medium heat.Grilled Chicken Margherita

After taking the chicken out of the marinade, cook it for four minutes with the lid closed. Grill the chicken for a further three to four minutes after flipping it. Place one tablespoon of pesto and a slice of mozzarella cheese on top of each breast, followed by cherry tomatoes. Close the grill lid and keep cooking for another three minutes or until the cheese has melted and the chicken is no longer pink inside. When placed in the center, an instant-read thermometer should register at least 165 degrees Fahrenheit (74 degrees Celsius).
