- Chicken breasts: I use about two or three medium-sized chicken breasts for four servings,
- pounding them to about ½ inch thick with a meat mallet to ensure even cooking;
- seasoning with garlic powder, salt, and pepper; pan-searing the chicken with olive oil; using your favorite store-bought tortellini (I really like cheese tortellini, and I buy the fresh ones (Rana or Buitoni brands) that come in the refrigerated section;
- frozen tortellini also works well; unsalted butter: Enhances the flavor and richness of the homemade alfredo sauce;
- I like to use fresh garlic here, chopping it fine enough to blend into the sauce.
- The foundation of our rich and creamy Alfredo sauce is heavy cream. Since milk and half-and-half might not be thick enough, I would not suggest using them.
- To ensure that it melts into the sauce, it is ideal to use freshly grated Parmesan cheese. Starches found in pre-shredded cheese can cause your sauce to become grainy.
- Italian parsley: Counterbalances the cream’s richness by adding a splash of color and a hint of freshness.
- To taste, add salt and pepper.
Step-by-Step Tutorial
Making this creamy chicken tortellini alfredo only takes 30 minutes! Here’s a brief outline of how I manufacture it.
Step 1 | Cook the Chicken
Sprinkle the chicken breasts with salt, pepper, and garlic powder. In a large skillet over medium heat, heat a few drizzles of olive oil. Sear the chicken for 6 to 7 minutes on each side, or until golden brown and cooked through in the center. After the chicken is done, take it out of the skillet and let it rest for a few minutes before slicing it into smaller pieces.

Step 2 | Cook the pasta
Let’s cook the tortellini in the meantime! Bring a big pot of salted water to a boil, then add the tortellini and cook to al dente, following the directions on the package. Drain and rinse with cold water to completely halt the cooking process.

Step 3 | Make the alfredo sauce
Melt the butter over medium heat in the same skillet you used to fry the chicken (be sure to clean it first), then add the minced garlic and cook for about a minute until fragrant.

Bring to a gentle simmer after adding the heavy cream and stirring. Add the grated Parmesan cheese gradually, stirring until it’s blended and smooth. To taste, add salt and pepper.
