Substitutions and variations

  • Unless you’re sure you can thicken the sauce and alter as necessary, I don’t advise replacing the cream with something else, such milk or half-and-half. Additionally, if you don’t use heavy cream, it won’t taste as wonderful.
  • Since garlic powder dissolves well and I didn’t want the taste of garlic to be too strong, I went with it rather than a clove or two. Having said that, you are welcome to use fresh garlic if desired!
  • You might add a handful of fresh spinach, frozen peas, or corn toward the end.

  • Regarding serving size, this recipe is pretty rich, so it does produce four decent portions. However, I would serve them with garlic bread, a side salad, or another dish. It’s more like two portions if you have people that eat a lot and are extremely hungry.

Leftovers and storage

  • Because the pasta absorbs sauce over time, leftover creamy chicken tortellini will dry up the longer you leave it in the refrigerator. Store it in an airtight container for 3–4 days.
  • To keep the sauce from separating, reheat it gradually in a saucepan over low heat.

Ingredients 

  • 1 (9 ounce) package refrigerated cheese tortellini
  • Salt & pepper to taste
  • 2 tablespoons butter
  • 1.5 cups cooked chicken (I used rotisserie) shredded
  • 1 tablespoon flour
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup chicken broth
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon lemon juice
  • 3/4 cup heavy/whipping cream

Instructions 

  1. As directed on the package, boil the tortellini in a pot of salted water.
  2. Meanwhile, begin the sauce just as the tortellini is about to be cooked. Heat a skillet over medium-high heat and add the butter. After it’s hot, add the flour and simmer for a minute or so.Chicken Tortellini Alfredo
  3. Turn the heat down to medium. To dissolve the flour, add the chicken stock and lemon juice to the pan and begin stirring for about 30 seconds.
  4. Add the garlic powder after adding the cream. Continue whisking until the sauce is smooth. Reduce for one or two minutes, or until the thickness you want is achieved. Add a little more cream or chicken broth if the sauce gets too thick.Chicken Tortellini Alfredo
  5. Stir in the parmesan.
  6. Pour in the drained pasta and chicken. Serve and savor after tossing to allow it to heat through and adding salt and pepper as necessary.
