Ingredients
- 10 ounces chopped broccoli
- casero pollo asado seasoning to taste
- ⅔ cup flour
- 2 tablespoons sour cream, or to taste
- 2 large eggs
- 2 tablespoons vegetable oil
- 2 ounces shredded sharp Cheddar cheese
- salt and freshly ground black pepper to taste
- 1 teaspoon Mexican seasoning mix
Directions Broccoli Fritters

Put chopped broccoli in a bowl that is safe to use in the microwave. Cover with a plate after adding 3 tablespoons of water. Set the microwave for two minutes on high.

In a food processor, combine the egg, flour, and softened broccoli. Pulse until thoroughly mixed. Move the blend into a basin. Add cheese, salt, pepper, and Mexican seasoning and stir until thoroughly combined.

In a non-stick skillet, heat the oil over medium-high heat.

Measure out about 2 tablespoons of the mixture with a scoop. Using a spatula, flatten the broccoli mixture after dropping it into hot oil. Cook the broccoli fritters for about three minutes on each side, or until golden brown.

Spoon fried fritters onto a cooling rack placed over a baking tray and garnish with salt and sour cream.
