Now for the confession: Olive Garden doesn’t exist in the UK, so I’ve never been there. However, because I love chocolate, I knew I had to make this Black Tie Mousse Cake after seeing and hearing about it so much! I don’t usually ‘copycat’ recipes, but this four-layered chocolate experience was too tempting to resist, so I made my own version. And I have a sneaking suspicion that it’s superior to the genuine thing because it’s homemade and flavorful!Black tie mousse cake

ingredients Black tie mousse cake
BOTTOM LAYER
- (18 ounce) box of ordinary cake mix (devil’s food)
SECOND LAYER
- 1 teaspoon knox unflavored gelatin
- 1⁄2 teaspoon granulated sugar
- 1 tablespoon cold water
- 2 tablespoons boiling water
- 3⁄4 cup heavy cream
- 4 ounces cream cheese, cubed
- 4 ounces semi-sweet chocolate chips
THIRD LAYER
- 3 egg yolks
- 1 teaspoon vanilla extract
- 1⁄4 cup granulated sugar
- 1 3⁄4 cups heavy cream
- 3 tablespoons flour
- 1 teaspoon knox unflavored gelatin
FOURTH LAYER
- 1 1⁄2cups heavy cream
- 1⁄2cup white chocolate chips (optional)
- 2tablespoons butter
- 18ounces semi-sweet chocolate chips

Directions
There are FOUR layers to make:
BOTTOM LAYER (cake):
- Use two circular pans and bake as directed on the box, then let cool. Use the cake from one pan as a single layer after it has cooled; the second cake from the second pan is not necessary. That is, you just need half of the recipe for box cake. This round cake should be placed in the bottom of a cheesecake pan. Using your fingertips, press the cake down slightly. Out of the four layers, this is the lowest layer.Black tie mousse cake
SECOND LAYER (the chocolate mousse):
2. Combine cream cheese and melted chocolate. Allow to cool. After a minute of softening the gelatin with cold water, add boiling water and whisk until the gelatin is dissolved and transparent. While you begin whipping the sugar and heavy cream, let this cool. Add the gelatin when the cream begins to thicken. Keep whipping until you get stiff peaks. Stir the chocolate mixture well after adding 1/4 of the cream. Then mix this with the rest of the cream. When finished, cover the cake with this chocolate mousse and place it in the refrigerator.Black tie mousse cake
THIRD LAYER (the custard):
3. Whiten the egg yolks by beating them. Beat in the gelatin, sugar, and flour until combined. Heat the vanilla extract and cream until they boil. A tiny bit of cream is added to the egg mixture while stirring. Pour the entire liquid into the pan through a strainer after adding the cream gradually until it has been poured completely. Keep cooking until the custard starts to get thick. While preparing the fourth layer, let the chocolate mousse layer cool somewhat before pouring on top and freezing.Black tie mousse cake
FOURTH LAYER (the icing):
4. Note that this recipe creates a lot of frosting, so feel free to cut this portion in half. I personally prefer a lot of icing on top. After bringing the cream and butter to a boil, pour the chocolate on top and let for five minutes. Mix until it’s smooth. Allow to cool until it begins to solidify. After taking the cake out of the freezer and removing the cheesecake pan collar, spread part of the icing evenly over the top and edges of the cake using a spatula. Place chocolate chips on the cake’s side while it’s still moist. Optional: If you want yours to resemble the one in the picture, melt half a cup of white chocolate chips in the microwave and swirl them into the icing.Black tie mousse cake
